12 oz. spring mix salad
1/2 c dried cherries
1/2 c pecan halves
6 oz. blue cheese chunks
2 apples, sliced very thin. I use Granny Smith
1/4 c olive oil
1 heaping T Dijon mustard
1 T maple syrup
1 t apple cider vinegar
Salt & pepper

Directions:
Directions:
Add the greens, cherries, pecans, cheese and apples into a large salad bowl.

Mix the olive oil, Dijon, maple syrup, vinegar and salt & pepper in a small bowl and whisk to mix well.

Pour a little of the salad dressing on top of the salad and toss to combine. Taste the salad and add more dressing as needed. The dressing flavors are strong, so measure them (donít eyeball it, as I often do). Any extra dressing can be put into a serving dish for those that want a bit more.
