2 Tbsp flour
2 tsp salt
1½ tsp thyme
¼ tsp ground pepper
1 small bay leaf (crumbled)
2 large onions (quartered)
2 large cloves crushed garlic
2 Tbsp oil
6 medium carrots (diagonal)
6 large celery stalks (halved)
8 small potatoes (halved)
5 lb beef for pot roast
¾ cup water or beef broth

Directions:
Directions:
Mix flour, salt, thyme, pepper and bay leaf. Rub into meat. Heat oil in large skillet with dome vented lid or in Dutch oven. Brown meat slowly on all sides. When browning last side add onions and garlic. Brown slightly. Cover and open vent or leave lid slightly ajar. Simmer 1½ hours. Stir onions once or twice. Add carrots, celery, potatoes and water or beef broth. Simmer covered until all is tender (2-2½ hours). Add a little more water or beef broth if evaporated. Remove roast. Let rest several minutes. Slice desired number of servings. Arrange on heated platter with vegetables. Cover and refrigerate or freeze remaining roast.
