1 box Lasagna
2 Tbsp Olive oil
¼ cup chopped onions
1 egg, slightly beaten
1 14½ oz can stewed tomatoes
1 6 oz can tomato paste
1¾ cups ricotta cheese (15 oz)
1 10 oz pkg frozen chopped spinach
1 cup shredded mozzarella cheese
2 Tbsp. grated parmesan cheese
½ tsp salt & ¼ tsp pepper
½ lb sausage (optional)

Cook pasta. Lay flat on foil to cool. Preheat oven to 350. In skillet heat oil. Add onions, cook stirring frequently until tender. Add stewed tomatoes and tomato paste. Heat to boiling; reduce heat. Simmer 5 minutes. Stirring to break up tomatoes; set aside.
In bowl mix together ricotta, spinach, mozzarella, egg, parmesan cheese, salt and pepper. In bottom of dish spread about ¾ cup tomato mixture. Spread some of the cheese filling on each noodle to within an inch of ends; roll up.
Place roll-ups seam side down in prepared dish. Top with remaining tomatoes. Cover, bake 35 minutes. Sprinkle with remaining mozzarella cheese and bake until cheese melts.
Sausage variation: ½ lb. sausage may be added with onions. Cook stirring to break up sausage until lightly browned.
