1¼ cup sugar
1 cup vegetable oil
2 eggs
1 tsp. vanilla
1 cup buttermilk
2 cup flour
½ tsp. salt
½ tsp. baking powder
½ tsp. soda

TOPPING:
4 Tbsp. brown sugar
1 Tbsp. cinnamon

GLAZE:
2 cup powdered sugar
4 tsp. vanilla flavoring
Hot water to make right consistency for drizzling over cake.

OPTION: you can also put into 3 pie pans instead of a 9x13.

Beat together sugar, oil, eggs vanilla and buttermilk. Add flour, salt, baking powder and baking soda. Mix well. Pour half of batter into a greased 9x13 baking dish. Combine brown sugar and cinnamon; sprinkle half of batter. Pour rest of batter on top and sprinkle with remaining sugar and cinnamon. Bake at 350 degs. for 30 to 35 mins. When the cake is done, poke holes into cake with a fork and drizzle with glaze while still hot.

This is a quick coffee cake to take to someone who needs encouragement. You don't need to wait until the cake cools--­ it is best warm!
