½ cup olive oil
½ cup sugar
¼ cup apple cider vinegar
1 tsp water
1 chopped green onion
1 chopped red pepper
1 chopped celery stalk
1 can of drained & rinsed corn
1 can of drained & rinsed black beans
1 can of drained & rinsed lentils
salt & pepper to taste

Directions:
Directions:
1. Mix together olive oil, sugar, apple cider vinegar, water and salt & pepper in a sauce pan. Bring to a boil, stirring until sugar is dissolved.
2. Cool for 20-30 minutes, then add remaining ingredients. Make sure canned beans and corn are drained and rinsed.
3. Let stand for 24 hours. You can drain juice before serving.

Keeps in fridge for 2 weeks although I have never had it last that long!
