1 Betty Crocker GF yellow cake mix
1 sm pkg. instant lemon pudding & pie filling
juice & zest from 1 lemon
c. oil or melted butter
c. water
3 lg. eggs
Lemon Glaze or frosting of your choice.

Directions:
Directions:
Preheat oven to 350. Combine cake mix, pudding mix, lemon juice & zest, oil & water. Mix well. Add eggs; blend on med-high until well mixed. Let mixture stand for 10 minutes. Fill paper-lined cupcake tins ⅔ full. Bake 18-22 minutes. Frost with your choice of frosting. A simple lemon flavored glaze, cream cheese frosting or vanilla butter cream frosting is tasty!
