1 cup red quinoa
1 cup toasted pine nuts
1 cup dried cranberries
2 small cucumbers, seeded
4 oz. feta
⅔ cup fresh parsley
cup lemon juice
⅛ cup olive oil

Directions:
Directions:
Rinse quinoa in fine mesh strainer. Transfer to pot with 2 cups water. Bring to boil, lower heat, and simmer covered for 15 mins, then fluff with fork. Transfer to bowl to cool.
Add pine nuts, cranberries, cucumbers, feta, and parsley. Mix well.
Combine lemon juice and olive oil.
Pour mixture over quinoa mix.
Refrigerate for 1 hour, serve cold.
