"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
2 apples
¼ c. rolled oats
½ c. apple juice
½ c. water
½ c. cooked brown rice or millet
¼ tsp. cinnamon
1 T. rice syrup
1 T. maple syrup (optional)
⅛ to ¼ tsp. ground cardamon (optional)

Directions:
Directions:
Core and slice apples. Lightly roast oats in a saucepan over medium heat, stirring until they smell toasty. Do not brown. Add apples and the rest of the ingredients. Blend smooth in a blender. Serve with chopped roasted almonds, chipped dates or malt sweetened chocolate chips or a combination of any. It would lend itself to a dollop of whipped cream, regular or soy.

This low key sweet can be dressed up or eaten plain as a nosh for someone who wants to lower their sweet cravings. The complex carbohydrate of rice makes it slow burning and easy of the body.

It is very simple to create.
