Ingredients:  
Ingredients:  
8 oz red potatoes, cubed
1 Tbsp chopped dehydrated onion
1 tsp cinnamon
1/2 tsp chili powder
1 1/2 curry powder
14 oz can fire roasted tomatoes
14 oz can coconut milk
1 tsp chicken bouillon
3 boneless, skinless chicken thighs, cubed
1 1/2 Tbsp quick tapioca
salt and pepper to taste
hot cooked rice

Directions:
Directions:
Put all ingredients, except salt and pepper, into large crockpot, stir. Cover and cook on low 4-6 hours or until potatoes are tender. Salt and pepper to taste. Add additional seasonings, if needed. Serve over rice.
