1 3/4 cup water
1/2 tsp salt
1/2 cup regular rice
2 cups scalded milk
2 beaten eggs
1/2 cup sugar
pinch of salt
1 tsp vanilla
sprinkle of nutmeg and cinnamon

Directions:
Directions:
Boil water, add rice and salt. Cover tightly and simmer over low heat 25 minutes or until water is absorbed. Add scalded milk to rice. Boil gently 5 minutes, until milk looks creamy. Remove from heat. In small bowl beat eggs, sugar, salt, and vanilla. Slowly add to creamy rice. Place in 2 qt. oven proof bowl. Place bowl in pan of 1 inch of warm water. Bake at 350 degrees 45-50 minutes or until knife comes out clean. Sprinkle with nutmeg and cinnamon if desired.
