4 medium red beets
4 c. baby arugula
¼ cup reduced-fat balsamic vinaigrette
¼ c. chopped fresh flat-leaf parsley
1 T. chopped fresh chives salt, freshly ground black pepper
½ crumbled goat cheese
¼ c. chopped walnuts, tosted

Prick the skin of the beets with a fork and microwave on high until tender, about 12 minutes. (Alternatively, you can wrap them in foil and roast them in the oven at 375 degrees for one hour.) When the beets are cool enough to handle, peel and cut them into bite-size wedges. In a large bowl, combine the beets, arugula, vinaigrette, parsley and chives, and toss thoroughly to combine. Season with salt and pepper to taste, top with crumbled goat cheese and walnuts.
