2 cups sugar ... 1 cup corn oil
4 eggs ... 2 - 4½ oz. jars of carrot baby food
1 tsp. vanilla ... 2 cups flour
1/2 tsp. salt ... 1 ½ tsp. baking soda
2 tsp. cinnamon ... 1/4 tsp. nutmeg & cloves

Preheat oven 350º. Combine sugar and oil, beat well. Add eggs, carrots & vanilla, beat till smooth. In separate bowl combine the flour, salt, soda & spices then add to creamed mixture, beat well. Fill greased muffin tins about 1/2 way full . Bake for 12-15 mins.

I have made these too many times to remember. I have used pumpkin baby food too - makes them so moist. I do use the mini-muffins size, they pop so easily in your mouth!
