1 1/2 cups sugar ... 1/2 cup butter
2 egg yolks or 1 whole egg
1 tsp. baking soda ... 2 cups flour
1 tsp. baking powder ... 1/2 cup buttermilk
1 cup lightly mashed bananas ... ½ cup pecans, if desired

Directions:
Directions:
Cream sugar and butter. Add egg yolks/egg and beat well. In separate bowl mix together the flour, baking soda and powder. Then add alternately with the buttermilk into the creamed mixture. Add bananas, mix well. Add nuts. Bake at 350º for 35-45 mins. Cool, slice and enjoy. Can be frozen.

This is my go-to recipe. Instead of buttermilk - which I never have on hand - you can just add a 1/2 tsp. of vinegar to regular milk.
