3 large tomatoes
1 tbsp.olive oil (or vegetable oil)
salt and pepper
3 eggs
Parmesan (shredded or grated)

Optional: chives

Directions:
Directions:
1. Preheat oven to 400° and line a small baking sheet with parchment paper, tin foil, or spray with cooking spray or use any non stick method you choose.
2. Slice tops off 3 tomatoes and hollow with a spoon.
3. Drizzle with olive oil and season with salt and pepper.
4. Place in oven and bake 10 minutes, until softened slightly.
5. Crack eggs into center and place back in oven to bake 12 to 15 minutes more, until egg is cooked to your preference.
6. Season with more salt and pepper and top with chives and parmesan cheese.
