Chipotle in a Bowl Recipe

1 lbs. boneless chicken breast
2 T. lemon juice
1 tsp. seasoning salt
1 tsp. oregano
1 tsp. cumin
1 tsp. garlic salt
tsp.chili powder
tsp. paprika
Cut chicken into strips. Marinade in seasonings for 4 hours. Fry chicken in 2 T. oil until no longer pink. Set aside.

2 c. rice
2 T. oil
1 c. onion, chopped
tsp. pepper
1 tsp. salt
4 tsp. chicken bouillon
1 tsp. cumin
1 tsp. oregano
1 tsp. garlic powder
4 c. water
Fry rice and onions in oil. Add water and seasonings. Cook until rice is soft.

2 c. cooked black beans
1 tsp. chili powder
tsp. lemon pepper
1 tsp. cilantro
Mix together. Simmer for 10 minutes.

2 c. sour cream
2 c. shredded Cheddar cheese
1 lb. shredded lettuce
3 med. tomatoes, chopped, or 2 c. salsa
Ranch dressing

Put rice-in 9X13-inch pan. Top with beans. Then add chicken. Spread sour cream over chicken. Top with shredded cheese. Cover and bake at 350 for 15 minutes. Uncover and bake 15 minutes longer or until heated through. Serve with shredded lettuce, tomatoes or salsa, and ranch dressing.
