3 cups flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/4 tsp baking powder
3 eggs
3 tsp vanilla
1 cup vegetable oil
3 cups grated zucchini
1 cup chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350.
Soft together flour, salt, baking soda, baking powder, and cinnamon.
Beat eggs. Add and mix well, sugar, vanilla and oil.
Add zucchini to egg mix, add dry ingredients and mix well.
Stir in nuts, if adding.
Split between 2 loaf greased loaf pans.
Bake 1 hour.
