2 Pounds of fresh organic carrots
2 tablespoons butter
¼ cup real maple syrup

Peel and wash carrots, trimming off ends. Cut the carrots into 1-inch pieces. Place carrots in a heavy-bottom pan (but not cast iron, unless it’s also enameled). Cover the carrots with cold water. Bring carrots to a boil over medium-high heat. Once they begin to boil, lower heat to medium and continue cooking until all of the water is cooked out and carrots are tender. Be sure not to scorch the carrots as the water cooks out. Remove from heat, add butter and maple syrup; toss with a spoon to coat the carrots. Serve immediately.
