Ingredients:  
2 carrots, grated
1 red pepper, finely diced
2 celery stalks, finely diced
¼ medium red onion, finely diced
¼ c. cilantro, chopped
2 T. toasted sesame seeds
¼ c. roasted cashews

Dressing:
2 T. sesame oil
1 T. fresh squeezed lemon juice
1 T. honey
2 tsp. coco aminos
1 tsp. grated ginger
1 small clove of garlic
Sea salt to taste

Directions:
Directions:
Combine all the dressing ingredients in a small bowl and whisk together. Set aside.
Toss all the remaining ingredients together in a medium-sized bowl. Pour over the dressing and toss to coat.
