2 Lbs Shrimp
2 Tbsp Oil Oil
1 Tbsp Butter
1 Large Scoop Sun Dried Tomato (In Italian Olive Oil, heaping tablespoon)
1 Large Scoop Minced Garlic (Heaping tablespoon)
1 C Heavy Cream
1/2 C Chicken Broth
1 Lemon juiced
2 Tbsp Dry White Wine
1/2 C Parmesan Cheese (good quality shredded is best)
1 Lbs Pasta (Spaghetti, Linguine, or similar)
Fresh Parsley (chopped)

Directions:
1. Cook pasta in heavily salted water with some olive oil.

2. As pasta cooks, add olive oil and butter to large pan over medium high burner. Once oil is hot, add shrimp, sun dried tomatoes and garlic and saute until shrimp begins to turn pink (not fully cooked). Added cream, stock, lemon juice and some parsley and heat until it begins to simmer. Turn down heat and keep warm until pasta is ready.

3. When pasta is ready, drain and return to pot. Add shrimp mixture and shredded cheese and stir until it has all melted together. Serve topped with additional Parmesan cheese and parsley.

There are no real measurements of garlic, tomatoes or parsley. I use a heaping tablespoon of each, but you can adjust the amounts based on your taste. I also use a small amount of white wine and rinse out the cream measure. Also fresh clams or cracked and cleaned crab can be substituted for shrimp.
