2 slices White Bread (finely chopped to make crumbs)
1 small Yellow Onion (finely grated)
One 10-oz pkg. frozen chopped Spinach (thawed & well drained)
1 tsp. Salt
¼ tsp.Pepper
1 large Egg
3 med-size Carrots
1 (24 oz.) jar Pasta Sauce Cooked spaghetti or Rice for 4-servings

About 1 hour before serving: Preheat oven to 400 degrees. Grease 13"x9" metal pan or line with foil. Chop bread until fine crumbs form(about 1 cup). Grate enough onion to equal 2 Tbsp. In large bowl, mix bread crumbs and onions with ground turkey, spinach, salt, pepper and egg. Shape turkey mixture into 16 meatballs. Place meatballs in pan and bake 25 minutes or until meatballs are lightly browned and cooked through. Meanwhile, thinly slice carrots and cut mushrooms into ½-inch pieces. In a 3 quart saucepan over high heat, heat carrots, mushrooms, pasta sauce and ½ cup water to boiling. Reduce heat to low; cover and simmer 20 minutes. When meatballs are done, add to sauce and simmer 10 minutes longer to blend flavors and cook veggies are tender. Serve over spaghetti or rice. Makes 4 main-dish meals.
