Slow cooker chili for hot dogs:
2 lbs. Ground Chuck
3 links Bratwurst, casings removed
1 lrg. yellow Onion, diced small (divided)
1 Yellow Pepper, diced small
2 or 3 cloves garlic-minced

1 12oz. can Beer like Budweiser(divided)
1 14oz. can Tomato Sauce
1½ tbsp. Chili Powder
1½ tbsp. Brown Sugar
1 tbsp. Worcestershire Sauce
1 tbsp. Cumin
1 tsp. Smoked Paprika
1 tsp. dried Mustard
½ tsp. Cinnamon
¼ tsp. Allspice

CHEDDAR CHEESE SAUCE:
2 cups shredded Sharp Cheddar cheese
1 tbsp. Cornstarch
One 12oz can Evaporated milk
Dash of Hot Sauce Salt and Pepper to taste.

Directions:
Season meats with salt & pepper, cook with ¾ of onion(rest for garnish), and all yellow pepper. Stir meat to a fine texture(no big chunks). Add garlic and½ can beer to pan. Bring to boil and cook til most of beer is evaporated, stirring. Transfer mixture to slow cooker. Add remaining beer & all remaining chili ingredients. Mix well, cover and cook on low for 4 hours or high or 2 hours.

CHEDDAR CHEESE SAUCE:
Toss cheese with cornstarch in small bowl and set aside. Bring evaporated milk to a bare boil in small saucepan. Add coated cheese in batches to the hot milk. Whisk the mixture after each addition. When sauce is smooth reduce heat to low and keep warm.

FOR ASSEMBLY:
8 high quality all-beef Hot Dogs, grilled until deep brown and blistered 8 top cut Hot Dog Buns, toasted Reserved diced onion---Diced dill pickles Pickled jalapenos Place a char dog in a bun. Top the char dog with hot chili and drizzle with warm cheese sauce. Sprinkle with onions, pickles and/or jalapenos if desired.
