2 c. cauliflower flowerets
14¾-oz can chicken broth
½ c. red bell pepper, chopped
1½ tsp finely shredded lemon peel
1½ c. fat-free half-and-half or milk
2 tbs flour
8-oz imitation crab flakes
2 tbs chopped fresh dill weed.

1) In a large saucepan combine cauliflower, broth, bell pepper, and lemon peel. Bring to a boil; reduce heat. Cover and simmer for 6-8 minutes or until cauliflower is crisp-tender.

2) Stir together half-and-half and flour. Stir into cauliflower mixture. Bring to a boil.

3) Gently stir in crabmeat. Heath through. Season with salt and pepper. Sprinkle with dill weed, if desired. Serve immediately.
