Dressing:
2 Tbsp Maple Syrup
2 tsp red wine vinegar
½ tsp Dijon mustard
2 Tbsp Extra Virgin Olive Oil
2 Tbsp fresh chopped chives
½ tsp salt and ½ tsp pepper
Whisk together first 3 ingredients then slowly add remaining – place in fridge to chill.

Salad:
4 slices of bacon – cooked and crumbled
2 Honeycrisp apples – julienne cut or diced
¼ - ½ c thinly sliced red onion
6 oz of fresh spinach
6 oz of romaine lettuce
Toss Salad

Right before serving add dressing, toss and serve immediately.
