1 medium spaghetti squash
1 clove fresh garlic minced
2 medium tomatoes chopped
2 T. olive oil
Juice of one small lemon
tsp oregano
fresh ground pepper
salt to taste


Directions:
Directions:
Cut spaghetti squash in half (clean out seeds). In a baking dish put squash face down in 375 oven. Bake for approximately 45 minutes or until done. Let cool for about 5 minutes. Using a fork, scoop out the spaghetti squash into a bowl. Ad the remaining ingredients and toss.
