c. packed brown sugar
6 med. yams, peeled & cut into 1/2 rounds(about 3 pounds)
3 T. butter, at room temperature
3 T. flour
1 cups heavy cream, heated
⅓ cup finely chopped pecans

Directions:
Directions:
With fingers mix brown sugar, butter, and flour until well combined, then add the pecans. Set aside. (This can be made ahead of time, store at room temperature.)

Bring pot of lightly salted water to boil. Add yams and cook until crisp-tender, about 5 minutes. Drain and rinse under cold running water.

Place yams in buttered 9 X 13 pan, overlapping in vertical rows. (The yams can be parboiled and placed in their baking dish up to 8 hours before baking, covered tightly with plastic wrap and refrigerate.) Pour the cream over the yams. Bake at 375 for 20 minutes. Crumble the pecan mixture over the yams and continue baking until the yams are tender and the topping is browned, 20 to 30 more minutes. Serve hot.
