4 tbsp butter
1 large onion
2 – 14 ˝ oz chicken broth
2 lb butternut squash (peeled, seeded, and cut into cubes)
2 med. Pears (peeled and sliced)
˝ tsp dry thyme leaves
˝ tsp salt
˝ tsp white pepper
˝ tsp ground coriander
1 pint whipping cream
Toasted pecans (optional)

Directions:
Directions:
Sauté the onion in butter until tender. Add the rest of the ingredients. Simmer until vegetables are tender. In small batches, put in blender or food processor until smooth. Add 1 pint whipping cream and beat. Be careful not to boil. Serve with toasted pecans on top.
