3 c finely chopped mushrooms (8 oz)
1 finely chopped onion
3 cloves garlic, minced
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
2 lbs 85% lean ground beef
8 hamburger buns, split and grilled
Escarole, radicchio, tomato slices, siracha mayo, and/or other toppings as desired

1. Stir together mushrooms, onion, garlic, Italian seasoning, salt and pepper in a large bowl.
2. With moistened hands, add beef and gently mix just until evenly combined. Pat into eight 1/2 inch thick patties
3. Preheat an outdoor grill to medium heat (325º to 375º) and lightly oil the grate. Add patties, cover grill and cook 5 to 7 minutes per side until an instant-read thermometer inserted in centers read 160ºF.
4. Serve on buns with desired toppings.
