1 cup diced jicama
1 cup shredded carrots
1 cup thinly sliced radishes
2 tbsp. balsamic vinegar
¼ cup extra virigin olive oil
½ tsp. coriander
1 tsp chili powder
1 tbsp. lime zest
1 tsp. salt

Step 1
Place jicama, carrots and radishes in serving bowl..
Step 2
in a small bowl, whisk vinegar and slowly add oil to create emulsion. Add coriander, chili powder, lime zest and salt; whisk until combined.
Step 3
Pour vinaigrette over veggies and mix well.
