9 eggs
3 cups milk
2 cups grated cheddar cheese
3 slices bread cut into 1" cubes
1-2 lb. sausage
1 1/2 tsp. dry mustard
1 tp. salt

1/2 to 1 c. steamed spinach, may be added for brunch type dish to add color (optional)
1 small can green chilies, may be added for additional flavor (optional)

Brown meat; drain well. Beat eggs well. Add milk, dry mustard, salt and eggs. Stir in bread cubes, cheese and sausage. Pout in 9x13 casserole and cover. Refrigerate overnight. Bake, uncovered at 350 for 1 hour.
