1 cup cold water
2 TBspns peanut oil
Pepper
1 tspn baking powder
1 egg yolk
Salt
1 cup plus 2 TBspns flour
Directions:
Directions:
Mix water, egg yolk and peanut oil.
Add salt and pepper and flour.
Beat with whisk to blend.
When ready to cook, add baking powder, stir briskly.
Dip fish into batter, one at a time, fry in fat until brown. (Do not crowd)
