1 1/2 cups Jasmine rice, rinsed and drained
1 can of low-fat coconut milk
1 empty coconut milk can of water
1 1/2 teaspoon kosher salt
1/4 cup sugar

Directions:
Directions:
Combine rice, coconut milk, water, salt, and sugar together in a saucepan. Bring to a boil over high heat. Then, give things a stir, scraping any rice from the bottom of the pan.

Cover saucepan and turn temperature down to simmer. Cook about 20 minutes, until rice is cooked (aka there's no visible liquid left and there are divots on top like cleats on a soccer field).

Remove lid to fluff with a fork. Place lid back on saucepan and allow to sit for another 5 minutes.

Top with shredded coconut, if desired

This is from Chrissy Teigen's cookbook "Cravings." This rice goes with literally everything -- even eating cold leftover chunks of it the next day is heavenly. You can garnish it with toasted shredded coconut if you desire, but I usually don't. It's perfect as is!
