Strawberry Jelly Roll Recipe

3 eggs
1 cup sugar
1 tspn vanilla
1 tspn sugar
1 cup sifted cake flour (self-rising)
1/3 cup water
1 pint of strawberries
1 pint of whipped cream

Beat eggs until thick and lemony ( 8 minutes).
Add sugar, water and vanilla to eggs.
Slowly add all sifted dry ingredients to mix and blend until smooth with spatula (folding it in).
Line a greased cookie sheet with wax paper and pour batter on.

Bake at 375 for 12-15 minutes.

Turn out on dry towel which was sprinkled with confectionery sugar.
Remove wax paper and roll up in towel to cool.
Slice 1 pint of strawberries, add tspn sugar, fold in whipped cream.
Unroll cake and spread strawberries on roll, roll again and frost outside of roll as well.
