Ingredients:
Cook potatoes (from 3 – 5 pounds) depending on the amount of salad needed.
3 medium-sized onions (chopped) 4 – 6 slices of bacon (fried crisp. reserve fat) 4 tablespoons oil 2 tablespoons vinegar 1 teaspoon salt ½ teaspoon pepper 1 teaspoon celery seed

Directions:Peel potatoes and keep warm. Add onions, salt, pepper, and celery seed. Add oil then vinegar to taste (enough to coat potatoes well). Add chopped bacon and 2 tablespoons of the bacon fat (hot). Keep at room temperature. Do not refrigerate!
(I have refrigerated this dish to serve the next day. You can reheat it in the oven for 10 minutes or just let it sit out to warm up.) |

Notes: My Aunt Bonnie (Lobb Boland) was a terrific cook. This is a potato salad I remember from our many Lobb family summer parties. You don’t have to worry about food poisoning with this one. The heat of the summer just makes it better. Bonnie was my mother’s only sister. My cousin Mary Ellen called her mom (Bonnie) and my mom (Marie), the Ditsy Sisters.
