2 T margarine
4 T oil
1/2 C flour
2 large onions, chopped
1/2 C lite mayo
3/4 tsp salt
3 1/2 C water + 2 T onion soup mix
5 large potatoes
Paprika
Black pepper

Directions:
Directions:
In a medium saucepan over a medium-low flame, melt the margarine with the oil.
Add the flour, onions, mayo, salt, water, and onion soup mix.
Stir constantly with a whisk until the mixture is smooth and it thickens to form a sauce.
Preheat the oven to 350 F
Slice the potatoes in a food processor. Layer into a 9x13 inch pan as follows: a layer of sauce, a layer of sliced potatoes (try to overlap just minimally), sauce, potatoes, and sauce (five layers altogether).
Sprinkle the top with paprika and pepper.
Bake uncovered for about 1 1/2 hours, until the potatoes are crispy.
