Dark Chocolate Mousse Recipe

12 oz. semisweet chocolate, coarsely chopped
2 TBspns unsalted butter, room temperature
2 TBspns rum
1/4 cup cold black coffee
6 eggs, separated

Combine chocolate and coffee over low heat until creamy.
Remove from heat, stir in butter until melted.
Stir in egg yolks, 1 by 1.
Return to heat, stir carefully over low heat to cook yolks.
Stir in rum.

In separate bowl: Beat egg whites stiff.
Stir 2 large spoonfuls into chocolate mixture until no white shows.
Then fold in remaining whites lightly.
Pour into bowl and cover tightly.
Refrigerate for 1 day before serving
