Any frozen vegetable from the bag
Extra Virgin Olive Oil or coconut oil
Baking pan

Directions:

Step 1
Preheat oven to 450F
Step 2
Place vegetables in medium bowl and toss with EVOO. Make sure each piece is thinly coated.
Step 3
Before adding veggies to baking pan, add a drizzle of EVOO to pan and place it in the oven emoty as it preheats.
Step 4
Roast veggies that are similar in size and texture together.
Step 5
Salt and pepper veggies. Also, add fresh or dried herbs.
Step 6
Half-way through baking, remove tray from oven and give veggies a gentle toss.
