6 hard apples (can be a mixture of kinds)
2 Tablespoons Butter
6 Eggs
1 teaspoon of salt
1 cup flour
1 cup milk

Directions:
Directions:
Preheat oven to 450º

Spread bottom and sides of a 10" cold skillet or casserole dish with flour.

Slide the apples and sprinkle with cinnamon.

Place the apples on top of the butter.

Beat eggs until very light, add salt and flour and then milk, beating all the time.

Pour the egg batter over the apples and bake for 20 minutes.

Take out of the oven and spread the topping all over the top. (See below)

Reduce heat to 350º and continue baking until crisp and brown.

For the topping: Mix lemon juice, brown sugar, butter, and cinnamon together into a paste.
