1 dozen eggs
Diced vegetables
Cooking spray
Other ingredients you might add to an omelette (cheese, diced ham, etc.)
Olive oil
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 350║ F. Spray muffin tin with cooking spray. SautÚ chopped onions, bell peppers, tomatoes, or greens in olive oil until cooked through. Remove from heat and divide the cooked vegetables among the muffin cups.

Crack 1 dozen eggs into a mixing bowl. Season with salt and pepper if desired. Whisk eggs and pour in each muffin cup over vegetables, etc.

Bake in oven until just set ( 12-15 minutes)
