3 medium leeks or 8 green onions
1 medium onion
2 T butter
4 medium potatoes, peeled and sliced
4 c chicken consomme
1-2 c cream
Salt and pepper

Directions:
Directions:
Mince 3 medium leeks or 3 green onions and 1 medium onion, or use two medium onions if other not handy. Stir and saute them for 3 min in 2 T butter. Peel, slice, and add 4 medium size potatoes. Add 4 cups chicken consomme. Simmer covered for 15 min or until tender. Blend until absolutely smooth. Add 1 or 2 cups of cream and salt and pepper. Serve cold with chives on top.
For us I add water and skim milk powder (presumably instead of cream).
