1 envelope (4 serving size) sugar-free lemon jello

1 cup boiling water

1 cup cold water

2 tsp. lemon juice

tsp. grated lemon rind

2 egg whites

Directions:
Directions:
Dissolve jello completely in boiling water, add cold water, lemon juice & lemon rind. Chill until slightly thickened. Then beat with a rotary beater or electric mixer until fluffy and thick and about double in volume. Beat egg whites until they form soft rounded peaks; fold gently into whipped gelatin. Pour into a 6 cup mold. Chill until firm (about 4 hours). Unmold. Makes about 8 servings.
