2-3 # beef chuck roast
1 envelope onion soup mix
1 can cream of mushroom soup
2 pkg. brown gravy mix
salt & pepper, to taste
2 # potatoes, pealed & cut in halves
2-3 lg. carrots, peeled & cut into thirds

Directions:
Directions:
Place roast in the bottom of the crock; salt & pepper. Place potatoes on top of roast & sprinkle salt on them. Place carrots on potatoes. In a bowl, mix onion soup mix, mushroom soup, gravy mixes & ¾-1 soup can of water. Whisk until smooth. Pour over potatoes & carrots. Cover and cook on high for 6-8 hours.

This is such an easy meal to fix for Sunday lunch. I put it on at bedtime Saturday night and it's ready Sunday morning. I turn the crock pot off. When I leave for church, I set the crock pot to low. Voila! Lunch is ready when I get home from church! I think this is Rebecca's favorite...at least one of them! LOL
