8 oz. pkg. manicotti shells (14)
# ground chuck or Italian sausage
1 c. onion, chopped
16 oz. cream cheese, softened
2 eggs, slightly beaten
2 (10 oz.) frozen spinach, thawed & well drained
c. bread crumbs
c. shredded Mozzarella cheese
2 c. spaghetti sauce, maybe more
2 Tbsp. Parmesan or Romano cheese

Preheat oven to 350. Cook manicotti; drain. Cool in a single layer on greased foil.

FILLING: Brown meat with onion; drain. Stir in cream cheese & eggs. Stir in spinach, bread crumbs & Mozzarella cheese. Using a small spoon, fill each shell with filling. Arrange shells in a baking dish. Pour spaghetti sauce over the shells & sprinkle with Parmesan cheese. Bake about 30 minutes or until heated through.

NOTE: To make ahead of time: Cook & fill shells. Cover & chill up to 24 hours. When ready to serve, pour sauce ove shells & sprinkle with Parmesan cheese. Bake for 40-45 minutes.
