8 c. chopped squash (8-9 lg.)
3 c. chopped bell peppers (2 lg)
2 c. chopped onions
2 c. sugar
2 c. vinegar
2 tsp. mustard seed
2 tsp. celery seed
Chopped hot peppers, opt. (2-3 lg.)

Directions:
Directions:
Place squash, peppers & onions in layers in a large pan. Salt and let sit 1 hour. Squeeze all the liquid out & drain. Add sugar, vinegar, mustard seed, celery seed & hot pepper. Bring to a boil. (It will change colors.) Place into glass jars and can.

2 recipes will make 6 pints or 9 (½ pints)

This is Aunt Joyce's recipe. It's really good with dried white beans & cornbread! Granny likes to eat it on hot dogs too.
