2 cups flour
1/3 cup sugar
2 tsp baking powder
1/8 tsp salt
1/3 cup butter, chilled
1/2 cup heavy cream
1 large egg
1 1/2 tsp vanilla

1 egg plus 1 tsp water for glaze ( optional)

Directions:

Preheat oven to 425º

lightly butter a baking sheet.

Stir together flour, sugar, baking powder and salt.
Cut butter into 1/2” cubes and distribute over flour mixture. Cut in until coarse.

In a small bowl, stir together cream, egg and vanilla. Add this mixture to the flour; stir until combined.

With floured hands, pat the dough to 1/2 inch. Using a biscuit cutter, cut rounds and put on the baking sheet. Lightly brush tops with egg and water.

Bake 13-15 minutes.
Cool for 5 minutes, then cool on a rack.

I LOVE scones, which are a British name for biscuits, but these are light, slightly sweet, and perfect with jam or clotted cream.
