1 1/2 c. Graham Cracker crumbs
1 c. Sugar
4-5 Tbsp. melted Butter

Filling:
24 oz. Cream Cheese (3 bricks)
1 c. Sugar
4 Eggs
2 tsp. Vanilla extract
1 tsp. Lemon juice
1 pint Sour Cream
1/2 pint Heavy Cream
2 Tbsp. Flour

Directions:

Crust:
Combine and press into the bottom of a 9" springform pan.
You can use the bottom of a glass or jar.
Put in the freezer to harden while making the filling.

Filling:
Put a pan with a half inch of water in it on the lower rack.
This can help the cheese cake from cracking as it cools.
They almost always crack anyway.

Pre-heat oven to 350 degrees. Bake on middle rack for 20 minutes, then turn the oven down to 300 degrees and continue baking for 40 minutes. Turn the oven off and leave the cheese cake in the oven for 1 hour. Remove from oven and let it cool, then refrigerate.

I like to put canned cherry pie filling on the top, it's delicious and covers the cracks.
