2 c. old fashioned oats
½ c. sliced almonds
½ c. pepitas
1 c. coconut flakes(optional)
½ c. brown sugar
½ tsp. cinnamon
1 tsp. kosher salt
6 Tbsp unsalted butter
¼ c. pure maple syrup
1 tsp. vanilla
1 egg white beaten until frothy
1 c. dried cranberries( or other dried fruit)

Preheat oven to 300 degrees. Line cookie sheet with parchment paper. In a large bowl, combine oats through salt. Melt butter in a saucepan over medium heat, stirring constantly with a wooden spoon until it turns from yellow to amber brown. Remove from heat. Stir in the maple syrup and vanilla. Stir together the butter and oat mixtures. Add the beaten egg white. Spread the granola evenly onto baking sheet. Bake for 30-35 minutes, stirring every 10 minutes. Watch closely. Allow to cool completely and then stir in dried fruit and put into air tight container.
