2 oz dry yeast (6 3/4 teaspoon)
2 Tablespoons sugar
2 1/2 cups water
2 teaspoons salt
8 cups regular flour

Topping:
1 egg, beaten with a fork
Salt
Sesame or Poppy Seeds

Directions:
Directions:
Dissolve yeast and sugar in some of the water, until yeast activates. Knead all ingredients together until a soft dough is formed, let dough rest for 10 minutes, take challah without a bracha
Form dough into 10 ropes, each one 1/2 inch thick and 6 inches long. Form into bagel shape by attaching edges (forming a circle)
Place bagels on a greased cookie sheet, brush top of each bagel with egg and salt, sprinkle sesame or poppy seeds on top (optional). Preheat oven to 425, bake for 20 minutes, until golden colored
Note: you can roll the dough into thin pencil shaped ropes and twist to form pretzels
