Bran Muffins Recipe

1 cup flour (white or brown)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup raisins
1 cup buttermilk or sour milk
1 cup natural bran
1/3 cup cooking oil
3 Tbsp molasses
1 egg
1/4 cup brown sugar
1/2 tsp vanilla

In a medium bowl, soak bran and sour milk for at least five minutes. Soak raisins in warm water until plump. Combine remaining dry ingredients except for brown sugar. After five minutes, add eggs, oil, drained raisins, molasses and brown sugar to bran/sour milk mixture. Mix well. Combine with dry ingredients, and stir just until moistened. Fill muffin cups 3/4 way full. Bake at 375 for 20-25 minutes. Let stand 5 minutes before removing from pan. Makes 12 muffins.
