½ c. finely chopped carrots
½ c. finely diced celery
1 med. onion, finely diced
1 tsp. olive oil
½ tsp. pepper
1 bay leaf
3 garlic cloves, minced
32 oz. chicken broth
2 c. water
2 c. milk, divided
½ tsp. dried oregano
½ c. flour
2 large chicken breasts, cooked & shredded
4.3 oz. box Rice-a-Roni Long Grain & Wild Rice + seasoning packet
Salt & Pepper, to taste

Directions:
Place carrots, celery, onion & olive oil into a large stockpot. Allow the veggies to simmer over medium heat for 10 minutes or until they are clear.

Add the garlic cloves, broth, water & 1 c. milk to the mixture. Mix well.

Add the pepper, oregano, bay leaf & chicken. Stir until combined. Allow the soup to simmer over medium heat for 15 minutes.

Whisk together the remaining cup of milk with the flour until smooth. Pour into the soup mixture & whisk together until combined. Add salt & pepper, to taste.

Place the rice & seasoning packet to the soup & mix well. Allow the soup to simmer for 20 minutes or until rice is tender.

***You can garnish with the chopped green onions or add them to the soup.
