2 c. Flour
2 tsp. Baking Powder
1 1/2 tsp. Soda
1 tsp Salt
2 tsp. Cinnamon
2 c. Sugar
1 1/2 c. Vegetable Oil
4 Eggs
2 c. Grated Carrot
1 {8 1/2 oz.} can crushed Pineapple, drained
1/2 c. chopped Nuts


Cream Cheese Frosting
1/2 c. Butter softened
1 {8 oz.} Pkg. Cream Cheese Softened
1 tsp. Vanilla Extract
1 lb. Powdered Sugar

Combine butter, cream cheese, and vanilla and beat well.Add sugar gradually. Beat vigorously. If too thick add a small of milk to thin to spreading consistency.

Sift together dry ingredients.Set aside. Mix together well Sugar,oil,and eggs. Mix together with dry ingredients. Stir in carrots, pineapple and nuts.Flour and grease 13x9 pan or 3- 9 inch round pans. Pour into pans and bake 350 degrees 30- 40 minutes. Depending on what size of pan .Cake will be done when top springs back when touched lightly or place a knife into cake and if it comes out clean. Let cool and frost.
