Ingredients: 2 c. Flour 2 tsp. Baking Powder 1 1/2 tsp. Soda 1 tsp Salt 2 tsp. Cinnamon 2 c. Sugar 1 1/2 c. Vegetable Oil 4 Eggs 2 c. Grated Carrot 1 {8 1/2 oz.} can crushed Pineapple, drained 1/2 c. chopped Nuts
Cream Cheese Frosting 1/2 c. Butter softened 1 {8 oz.} Pkg. Cream Cheese Softened 1 tsp. Vanilla Extract 1 lb. Powdered Sugar
Combine butter, cream cheese, and vanilla and beat well.Add sugar gradually. Beat vigorously. If too thick add a small of milk to thin to spreading consistency.

Directions:Sift together dry ingredients.Set aside. Mix together well Sugar,oil,and eggs. Mix together with dry ingredients. Stir in carrots, pineapple and nuts.Flour and grease 13x9 pan or 3- 9 inch round pans. Pour into pans and bake 350 degrees 30- 40 minutes. Depending on what size of pan .Cake will be done when top springs back when touched lightly or place a knife into cake and if it comes out clean. Let cool and frost. |
